    Vacuum packing food in a controlled environment can keep it good to eat for longer. But even professional food packaging plants will not guarantee the durability, unless you refrigerate the food.

    Unless you have sterile facilities to treat the food, even a vacuum packing mashine used in your home, will only add a few days refrigerator-life to some types of food (whole pieces of meat), and maybe a week to some types of vegetables (with low water content).

    this is what i would advise considering it sounds like you have your own vacuum sealer (way to go!).

    Refridgerator: regular, fresh food in the fridge should stay in there no longer than 7-10 days assuming it’s not something that’s been preserved, then you have much longer. i make a lot of homemade preserves, and those can keep indefinitely as long as they’re sealed, but once they’re opened i give them about 3 weeks in the refridgerator, and i do about the same for anything i’ve put in the cryovac (again, there are some exceptions).

    Freezer: if you’re cryovac’ing something and tossing it in the freezer…well, it won’t keep indefinitely, but you pretty much have all the time you want. back where i used to work, we’d seal and freeze a lot of meat products (livers, kidneys, etc.), and those had been in there months. while i don’t necessarily think that freezing is the best thing to do with your food the fact remains that if you want to preserve it you’re just not going to get better than a clean, cryovac bag and a freezer. things will last months to a year in there (probably more, but i’ve never let anything last that long).
